Celeriac is a wonderful root celery.  We love to cube it up and add it to soups, stocks, and roasted veggie mixes.  Creamy flesh and buttery texture when cooked, celeriac can also be eaten fresh grated on salads or turned into a slaw like cabbage.  Celeriac is easier to grow in the desert than celery, and stores fresh all winter long when stored properly.  

Here is our breeding population of large, smoother, more heat-tolerant celeriac selections.  While the natural knobbiness of celeriac is so charming in a folk-garden sort of way, it is difficult to clean, especially for market farmers.  This population is our smoothest selection from a mix of large celeriac varieties.  Try it out and continue the breeding work!

How to grow it:

Dappled light aides germination, lightly press seeds into soil when starting in the greenhouse.  Start up to 12 weeks prior to last frost, as germination can take up to 3 weeks and prefers cooler weather when transplanted.
